The real pizza of Napoli ( "la verace pizza napoletana" )
will get its characteristic and unique taste only by baking it in a stone oven.
In these wood-fired brick ovens
the floor is tiled with heat-storing clay bricks on which the pizza is directly placed.
Only on a real fire clay brick will the pizza develop its crispy and crunchy dough,
because the pizza draws the heat directly from the hot brick.
Due to the porosity of the fire clay bricks
and the finely-rough surface an
extremely fine air layer develops between
the hot-stone area and the pizza dough.
Within this air layer,
any excess moisture of the dough is
absorbed and drained off to the sides.
Result : The crust turns crispy with
a topping remaining soft and "juicy".
And this is how it works with our PIZZA STONE as well.
When using our PIZZA STONE, which is also made of fire clay,
you only need to place the stone ( both sides can be used )
onto the grate of your electric- or gas-oven.
After preheating the oven at its highest setting for about 30 - 45 minutes,
the PIZZA STONE will have reached the perfect temperature
and you can proceed to bake your pizza.
Using the hardwood PIZZA PEEL you slide your pizza onto the hot PIZZA STONE
and it will be ready after 5 - 7 minutes just as if in a real stone oven.

just as it is possible to bake a loaf of bread on a PIZZA STONE !
if you intend baking bread on a regular basis,
it is recommendable to use a BREAD BAKING STONE !
The appearance :
The PIZZA STONE has a characteristic salmon pink colour ( brighter than terracotta ),
which takes its origin from natural clay deposits.
Depending on the place of origin, fire clay can also have a yellow or light grey colour.
Proofs of the natural origin of the material are in its colour shades.
No stone looks like the other.
Because of its porosity it is a bit rough on the surfaces and the longer sides
like fine sandpaper or like the back side of ceramic tiles.
On the shorter sides the clay-stone is much coarser making its handling easier.
Due to the manufacturing process
the dimensions of all the edges cannot always be 100% accurate.
You may also find small cracks which do not represent any technical fault.
From a functional point of view the PIZZA STONE is definitely to be considered a kitchen tool !
It is not meant to be placed in a showcase !

The material :
The PIZZA STONE is made of special double-fired clay.
Technical term : fire clay
Here it is dealt with a clay found in the nature which is once burned.
After this burning process, the material is grinded,
mixed with new clay and burned for a second time.
During this process, no extraneous materials are added
since this special kind of fire clay is preferentially used
for the construction of wood-fired ovens and consequently
absolutely does not cause any problems when getting in contact with foodstuffs.
This type of material is characterized by an extreme thermal resistance
and by an enormous heat-storing capacity. ( and that’s exactly the point ! )
It is obvious, that a raw ceramic material can be brittle.
During everyday handling, even during our packaging and delivery,
it may happen that edges are scratched or slightly broken.
This does not have any negative effect on its functioning.
The PIZZA STONE does not exist of fire-proof concrete !
We are often asked about the duration of the heating-up period
and the energy costs related therewith.
A sample calculation for that :
The average oven used in households usually has a performance of 2 kw/h.
This means a consumption of 2000 watts of electrical current per hour.
Energy supply companies in our region - Northern Germany -
calculate approx. EUR 0.23 per kw/h. - Thus, a preheating time of
approx. 45 minutes consumes electricity costs of approx. EUR 0.35.
Should you bake approx. four pizzas in the subsequent 30 minutes,
this causes additional electricity costs of approx. EUR 0.23.
All in all, so inclusive of 45 minutes preheating time, baking four pizzas consequently
causes overall energy costs of approx. EUR 0.58 - that means EUR 0.15 per pizza.
Please bear in mind the prices you pay at a pizzeria
and you will agree that in our opinion a discussion
about the preheating costs of a PIZZA STONE is really unnecessary.
